This proprietary material, only available from Shun, is extremely fine-grained to get the most out of the steel, and its excellent construction also ensures a sharp, long-lasting blade in any kitchen environment. Resistant to corrosion and wear, this knife is also constructed with a full composite tang for superior balance.
