Heats well and holds its water consistently, but the corners are VERY rounded making it difficult for certain pans to fit properly. I have to play around with spacers/sizes/shapes for them to fit flush with the rim. I'll admit I have a mixed bag of brands when it comes to hotel pans, but my other steam well doesn't have any issue fitting whatever pans I grab for service. I'm able to make it work but it's definitely a hassle that I have to manage every time I build out my steam well each day.
