Made of 22 gauge, 300 series stainless steel, this pan has better balance and is stronger than those made of other materials. This helps it resist dents and dings in the toughest kitchen environments! Additionally, this pan has a temperature tolerance of - 20 degrees Fahrenheit to 450 degrees Fahrenheit and diagonally tapered pour corners that are up to 300% stronger than previous models. The pan also features a patented, angled ramp and built-in, anti-jam stacking lugs to enable hassle-proof separation and lifting.
Featuring the finest available layer of SteelCoat x3 coating, the pan has a dramatic black interior that enhances both cold and hot food presentations. Its interior is non-stick, so it's easy to cook, serve and display in the same pan. How can I best maintain the non-stick qualities of this item?
To prevent food from sticking to your non-stick surface, we recommend lightly coating it with oil and wiping off any excess with a soft cloth or napkin. Applying sprays on non-stick coatings can cause food to stick more readily than using a fat or oil. Sprays can leave a glue-like coating, often missed during the cleaning process, which will begin to build up and cause foods to stick. Additionally, metal utensils and abrasive cleaners should not be used with non-stick surfaces to prevent scratching and damaging the coated surface.
My hotel pans are jammed together. How can I separate them?
There are a few methods for separating stuck pans. First, run hot water over the outside pan, then fill the inside pan with cold water. The temperature difference should increase the gap between the pans and allow them to separate. Another option is to place a small amount of soapy water around the rim of the pan to break the surface tension. Wash both pans thoroughly after separating. You can also use leverage to insert a plastic spatula between the rims and twist gently without forcing the spatula. Do not use metal tools, as this can bend the lip or scratch the pans.
