Welcome to Vollrath University. I’m Chef Rich, and today we’re here to talk to you about the Lettuce King 1. Lettuce King 1 as you see here is primarily for lettuce, also soft vegetables, I want to you to also think of things like fruits; and even things like cooked meats. This is a very versatile machine; it comes in four different blade sizes. We’ve got a 3/16” cut for a very fine shred, 1/4", 3/8”- all the way up to a 3/4" slice, so we get a nice thick cut for something like this melon. When you look at this machine you can see a two-handed operation that’s important because when you’re pulling down on this, you want to have a lot of force to make sure you’re getting through some of the more dense products, like a head of lettuce. Also, notice the wide base- that’s for stability so we can really give it a lot of force and not have to worry about the unit tumbling off the table. Let’s go ahead and show you how this works. I like to cut the head of lettuce in half- that’s one thing I’ll recommend, just to cut it in half it makes slicing a little bit easier, and I’ve got a pretty fine shred on here today. I’ve got the 3/16” cut, so I’m going to take a little bit of force. Notice with two hands. Okay so you see now for the lettuce, this is a 3/16” cut- that’s a pretty fine cut for a nice shred for lettuce. If you’re doing things like the melon or the chicken, I might tend to lean more toward that 3/4” cut, a little bit thicker. The 3/8” and other cuts, 1/4"for maybe softer vegetables, but definitely stick to those thicker slices for things like the cooked chicken and the melons.     We were really excited for this product. It saves a bunch of time. The description states that it is great for cooked chicken breast. However, I do not recommend using it for chicken. The first day we used it, a blade snapped and dropped metal in our chicken. We had to throw an entire batch of cooked chicken away. We ordered another blade assembly thinking it was a fluke. We tightened everything before use as recommended. Halfway through cutting a batch of chicken, a blade broke AGAIN! We have contacted Webstaurant and basically been told it's not covered under any kind of warranty! So basically we bought 2 blades and got 1 use out of each of them. DO NOT BUY THIS PRODUCT WITH INTENTION TO CUT COOKED CHICKEN!!

    This product is a great time saver. I use it in the mornings to make the breakfast, and it's great. Perfect cuts every time, easy to use, and it stays sharp forever. The only cons with this product for me would be, it can be quite a handful to give a deep cleaning. But if kept well cleaned and lubricated, it should present nothing but excellent use. Would recommend this product to anyone in any industry.
