Vollrath 403N Redco Lettuce King I 1/4" Vegetable Shredder and Slicer - 28 Blades

Welcome to Vollrath University. I’m Chef Rich, and today we’re here to talk to you about the Lettuce King 1. Lettuce King 1 as you see here is primarily for lettuce, also soft vegetables, I want to you to also think of things like fruits; and even things like cooked meats. This is a very versatile machine; it comes in four different blade sizes. We’ve got a 3/16” cut for a very fine shred, 1/4", 3/8”- all the way up to a 3/4" slice, so we get a nice thick cut for something like this melon. When you look at this machine you can see a two-handed operation that’s important because when you’re pulling down on this, you want to have a lot of force to make sure you’re getting through some of the more dense products, like a head of lettuce. Also, notice the wide base- that’s for stability so we can really give it a lot of force and not have to worry about the unit tumbling off the table. Let’s go ahead and show you how this works. I like to cut the head of lettuce in half- that’s one thing I’ll recommend, just to cut it in half it makes slicing a little bit easier, and I’ve got a pretty fine shred on here today. I’ve got the 3/16” cut, so I’m going to take a little bit of force. Notice with two hands. Okay so you see now for the lettuce, this is a 3/16” cut- that’s a pretty fine cut for a nice shred for lettuce. If you’re doing things like the melon or the chicken, I might tend to lean more toward that 3/4” cut, a little bit thicker. The 3/8” and other cuts, 1/4"for maybe softer vegetables, but definitely stick to those thicker slices for things like the cooked chicken and the melons.
