3 tea bags Numi Rooibos chai
1 cup heavy cream, unsweetened
1 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. ground ginger
1 tsp. ground cardamom
1 tsp. ground nutmeg
3 tsp. cornstarch
4 egg yolks
3 drops vanilla extract
5 oz. confectioner's sugar
10 egg whites
Pinch of salt
Preheat oven to 375 degrees Fahrenheit. Tear open tea bags and pour contents and cream into a pot. Bring cream mixture to a simmer. Add remaining spices. Dissolve cornstarch in a little water and add to cream mixture. Stir mixture until thickened. Beat egg yolks, vanilla extract, and sugar and add to cream, then stir over low heat for 5 minutes. Turn off the stovetop and set aside. Beat egg whites and salt until fluffy. Fold into cream mixture. Lightly grease souffle dishes with butter and pour in batter, then bake for 20-25 minutes until it rises. Let cool. Add a dash of confectioner's sugar on top and serve with vanilla ice cream and fresh raspberries.
