3 Numi organic mate lemon tea bags
1 cup water
1/2 cup unsweetened almond milk
1 2" strip of lemon peel
1 small pitted date
1 tsp. vanilla extract

Steep three Numi organic mate lemon tea bags in one cup of boiling water for 8 minutes. Discard the tea bags and set the tea aside. Separately, heat the almond milk and lemon peel strip on low heat until hot but not boiling. Turn off the heat, cover, and infuse for 10 minutes. Strain almond milk and discard lemon peel. Combine tea concentrate and milk, then gently reheat. Once the mixture is warm, turn off the heat. Add date and vanilla and using an immersion blender, blend on high speed until beautifully smooth and frothy. Serve immediately.
