I'm not a professional chef but an advanced home cook. For years I had a block set of expensive Japanese knives and while I still enjoyed using them and the aesthetics, and they were well-balanced, they were too large and too heavy, the steel is brittle and suffered a few chips and I even had to replace the utility knife under warranty when the entire blade broke off at the bolster after accidentally dropping it. Turns out they were not full-tang and what tang there was was only about 1/4" thick. I'd been wanting to replace them for about two years now and did a lot of research in the meantime. I also made my own knives as a teenager (from kits, I didn't forge them) so I know a bit about how they're put together.
