What is VG-10?
VG-10 is incredibly durable, high end stainless steel with a high carbon content that is made in Japan. This steel features 1% carbon content, which is double the carbon content of some other forged steel blades. These Sujihiki knives are not only great for raw fish but also for boneless cuts of meat. We use them to cut tenderloins into individual filet mignon portions, and they work fantastic for that!
