How does ambient room temperature influence the performance of this cabinet?
Ambient room temperature can affect the temperature of your food product at holding / proofing. Due to differences in ambient room temperature, you may need to monitor the proofing process and / or adjust the proofing temperature and humidity settings of your heated holding / proofing cabinet to achieve the desired results. You may also need to adjust the temperature of the water used to produce steam.

In proofing mode, once steam is generated from the water contained in the bottom water pan, adjustments can be made to release heat in order to reach the desired temperature. If you are trying to proof at low temperatures, the desired proofing temperature must be warmer than the ambient temperature in your kitchen.

This heated holding / proofing cabinet operates at the following temperatures in heat and proof modes:

Heat Mode: 80° – 185° Fahrenheit
Proof Mode: 85° – 115° Fahrenheit (30-100% Humidity)
For effective heat retention and moisture resistance, this unit is insulated with Extruded Polystyrene (XPS). XPS is less prone to molding, providing a longer life for your unit.
The numbered settings on the cabinet correspond to approximate temperature and humidity ranges to help you dial in holding or proofing conditions. Below are the estimated values for each level. These ranges are approximate and may vary depending on operating conditions, but they provide a guide when adjusting your cabinet for different products or applications.

The proofing function of this cabinet works best when it’s filled to near maximum capacity. A greater amount of dough will absorb excess humidity, keeping the cabinet temperature at the lower range.
Insulated and non-insulated holding cabinets both offer the same function by holding food at safe temperatures for hours until ready to serve, but for best results it's important to make a purchase based on your desired application. Non-Insulated Holding Cabinets are intended for applications where the doors will be closed for the majority of the day, such as proofing bread or keeping back-up portions hot. Does the job well. But it looses a lot of heat as it is not insulated. I added a foam foil to the walls, and it retains more heat now. It is really meant for stacking next to each other. Insulated ones at the ends.
