i used this a number of times to get start with a pastry dough cutting the butter or fats into the flour. the batter is reduced to 1/4 butter pellets and the bowl need to be chilled to maintain the butter in the dough.

Sooo I never knew this attachment existed until I saw it on Webstaurant store. I've had the large Commercial Edition 8qt Kitchen-aid mixer (KSM8990ER) since 2017, but I've never seen this attachment before. Today, I used it to cut in my cold butter into my flour for a pie, and it was as effortless as turning it on XD. The fit for my Kitchen-Aid is flawless, and the finish of this attachment is top-notch. It is also easy to pick clean with a spatula (much more so than a pastry cutter), and even easier when you can simply shove it into the dishwasher. All of Kitchen-Aid's attachments are on the expensive end, but this one is likely the most useful I've ever bought outside of the pasta roller attachment. Honestly, this thing is so useful, it should be included with the mixer, but since it's not, go ahead and buy it. You won't regret it!

I give this a 5 star for the quality of this beater! It is very heavy though and it's a pain to get anything off of the beater. However, you can't beat it for the price and the first one they sent to me was warped but this one is working fine. I wished that KitchenAid made the exact replacement for the 8 qt commercial mixer. The original is different and not heavy like this one.
