To begin using the Chef's Choice 2100 electric knife sharpener, place your knife into the first compartment and slowly pull up on the handle to evenly sharpen the blade. Make sure to repeat that step on the other side of the blade. Then place the knife in the second compartment and repeat. Again, remember to sharpen both sides of the knife. Once you've pulled both sides of the knife through the first two compartments, move to the third compartment. Here you should repeat step one and two, but pull the knife through 1-2 times on each side. To resharpen, repeat only the third step.
