I bought this for dicing up my beef fat. I've used it on the rendered fat when i need to break it up. i love the length and the curved shape that allows me to easily rock the knife into the hard fat and split it easily. I'm excited to see how it holds up against the fat on my next batch.
Normally I buy knives that cost 10 times the mount of the choice knife, but I bought this knife to have a spare for using on jobs that I did not want to risk damaging a more expensive knife. I was amazed that the quality of the steel in this butcher knife. The steel takes aand holds an edge very well. Don't get me wrong, this know is not the same as an expensive butcher knife. But I feel like the price is worth more. I am very pleased and I think the entire line woudl be a great for heavy usage.
