Create specialty molded treats and confections with these white chocolate wafers! Crafted with milk solids, sugar, and cocoa butter from sustainably-harvested cocoa beans, these fine chocolate wafers deliver a rich flavor and smooth performance you can rely on. An integral ingredient in your kitchen, these versatile wafers can be chopped and incorporated into high-end baked goods, melted and made into a dreamy chocolate ganache, or tempered for chocolate pieces with an irresistible shine and snap. Plus, with their uniform size and shape, these wafers are easier to work with than a whole block of chocolate and are more accurate for measuring and incorporating into recipes.
Perfect for making chocolates with a lusciously smooth texture and sweet white chocolate flavor, once tempered you can enrobe anything with this chocolate for a delicate, crisp shell. Use this chocolate to create a silky white chocolate peanut butter ganache to use for the center of a hand-rolled white chocolate truffle. Or, mix melted chocolate into a fluffy buttercream frosting, smooth ice cream base, or silky pastry cream. You can even chop these wafers to fold into an over-the-top signature chocolate chip cookie in your upscale bakery. Add a touch of rich chocolate flavor to any dessert in your bakery, chocolate shop, or restaurant with these delicious white chocolate wafers!

This is a great chocolate for the price and very affordable for bulk use. It melts beautifully, has a smooth texture, and makes a great ganache. I also think it has a higher cocoa butter content, which gives it a nice consistency for dipping or coating. However, the smell just doesn’t work for me. It has more of a pure cocoa butter scent than a rich, creamy chocolate aroma, which takes away from that luxurious feel I like in white chocolate desserts. Overall, it performs well, but I personally prefer the Ghirardelli melting wafers for both flavor and aroma.
