This is a great chocolate for the price and very affordable for bulk use. It melts beautifully, has a smooth texture, and makes a great ganache. I also think it has a higher cocoa butter content, which gives it a nice consistency for dipping or coating. However, the smell just doesn’t work for me. It has more of a pure cocoa butter scent than a rich, creamy chocolate aroma, which takes away from that luxurious feel I like in white chocolate desserts. Overall, it performs well, but I personally prefer the Ghirardelli melting wafers for both flavor and aroma.
