Solid steaming tray, just like the other Super Pans. My only gripe is that the perforations should extend a bit wider but other than that, these do the job.
I love Vollrath steam tables. They are a high quality stainless steel. These perforated ones though, are my jam. When serving bulky items, the holes allow for better heat transfer as well as easier draining of any liquid / condensation (think vegetables). There are obvious uses for the solid ones, but these perforated ones have their uses and where they work, they work superbly.
