This convection oven features 1400 watts of heating power, a custom baffle fan, and a diffuser plate to evenly bake all of your most popular foods, and the temperature is adjustable from 150 to 570 degrees Fahrenheit. For versatility, this model also features a broil function for various meats, and its compact footprint makes it ideal for catering operations. And thanks to its easy-to-use timer, this oven can be set to automatically stops baking after 120 minutes.

The Vollrath 40703 Cayenne convection oven features a removable cool-touch door and knob guards for operator safety, and the removable shelf runners and rounded interior corners allow for fast and easy cleaning. The exterior and interior are made of stainless steel for outstanding durability, and the non-tip chrome plated steel shelves allow for easy baking. Its compact footprint also makes it portable for catering operations. And to help you monitor baking progress, this oven comes with an interior light.

BEWARE of this product AND This Company!: This Oven is THE WORST oven I have ever had! It takes almost an hour to reach temperature - The Broil heats but doesn't broil - And lastly this company would not honor my request for a return 3 DAYS after I received it - They said it was under warranty since I used it!!: 'Turned it on'!!!!!! & I had to deal with the manufacturer!!! THE WORST Experience ever with any purchase of any item.....

This oven takes some getting used to. Whoever is saying you can bake/cook on all the racks - can't possibly be cooking food properly. I purchased two of these due to my inspector insisting I needed a hood and vent for baking when I in fact do not. My work around was this oven. The second from the bottom row is the best row to bake. If you use the bottom - not enough air gets under the sheet pan so it's takes forever to bake anything. If you use more that one rack - again - it takes forever to bake anything. Same if you use a rack that's too high up. As others have noted you have to be mindful of the knob on the side and bulb when when using those rows - but again don't use those rows as product just does not cook evenly. You Read More

Overall this is a good oven. It does tend to be somewhat uneven, however. My biggest complaint, though, is there is a lightbulb on the inside that blocks a couple rows of space, as well as two knobs that hold the racks to the side that block more rows. This makes it a big pain if you're trying to bake with multiple pans because only about half of the racks will accept pans.

Ordered this because my Avantco oven died after 6 months. This seems to be a much better quality oven, but definitely has some serious hot spots.

I purchased the Cayenne half size convection oven to make baking my sugar cookies easier, and it has been an awesome addition to my bakery kitchen. I easily slide three half size sheets in and cut my baking time significantly. I have tried to fit 4 pans in and it is a tight squeeze with the light bulb on the right side. That light bulb also occasionally creates a hot spot that browns the tops of the cookies that are close to it. To counteract that issue I place a strip of cookie dough in that spot on the sheet closest to the bulb and let that absorb the light heat. It's a great little oven and it gets the job done. Also, because it is 120v it does not require any separate wiring like an electric range. Overall I am super happy with this oven. It is easy to use, efficient, has a small footprint and it is a quality machine.
