Sirman 28181000 #1000 Adjustable Lasagna Pasta Die - 1-4mm (1/32"-3/16")

This is pretty versatile sheeting die, and fairly easy to use: the screw lets you adjust the thickness of your sheet, and the built-in blade cuts the tube down the side. Voila! Not only faster than using a rolling machine, but you get the nice rough-cut texture that comes from bronze dies, and you also get greater consistency than is generally possible rolling by hand. Mostly. We noticed that when we make a long batch (more than 20 or 30 minutes at a time), the die seems to loosen, resulting in gradually thicker sheets. Not a huge deal, but absolutely worth watching for. Another thing to note: because this creates sheets from a circular shape, you can (theoretically, anyway) make sheets of almost infinite length, but they'll be a maximum of about 6.5 inches wide. That's fine for lasagna, farfalle, and filled shapes like ravioli, but if you want something wider, you'll need to go with a traditional roller.
