Sirman 28180077 #77 Rigatoni Pasta Die - 8mm (5/16")

We'd been making pasta for several months with a mid-size roller before product demand led us to upgrade to one of Sirman's extruders. We decided to start with a set of five dies, including this #77 rigatoni die. It's performed exactly as we'd hoped: the shape is the size we expected, and the bronze-cut texture is nice and rough. We did discover that Sirman's mechanical cutter has been digging into the bronze surface, which is a little disappointing; eventually it'll dig so deep we won't be able to use the cutter anymore. Cleaning the bronze dies - especially this rigatoni die - can be a bit of a challenge. We've discovered the best strategy is to let the die soak in a tub of water with a few drops of vinegar. Eventually the dough will soften enough you can wash it out with a sprayer. Alternatively, wait until it's ready for the next use, then you can just let the extruder push the old dough through.
