Maintain the edge on your Shun knives with this Shun DM0610 3-piece knife sharpening system. This set includes a 1000 / 6000 grit combination whetstone, a combination honing steel, and a 16 degree angled bamboo stand. This system is designed to make it easier to sharpen compatible Shun knives (sold separately). When not in use, the stone and steel fit nicely into the stand for easy storage!

Simple to Use

To sharpen your knives, place the stone on top of the bamboo stand. Ensure your knife is at the proper angle by keeping the blade flat and parallel to the working surface as you pull it across the stone. Once the knife is properly sharpened, you can maintain its edge for longer periods of time by regularly honing it with the included honing steel.

Dual-Sided Design

This dual-sided stone features a 1000 grit surface on one side and a 6000 grit surface on the other for a quick and convenient tool. The orange 1000 grit side is ideal for honing knives with intact edges, while the white 6000 grit side allows for smoothing and polishing. When you need to use the honing steel, there is an angle guide at the top of the handle to help guide your motions.

How to Hone Your Shun Cutlery

Hone your Shun cutlery like a pro with these detailed steps and diagrams.

Honing your Shun cutlery:

Unlike sharpening, honing does not remove steel, it straightens a rolled edge to enhance performance.

So, what exactly is a rolled edge?
During normal use, your knife edge will roll over at some point. A rolled edge is when the blade edge is bent over to one side or the other. This will make your knife feel dull.

Our honing steels have two different surfaces: a smooth side and a micro-ribbed side. Depending on usage, the smooth side is for weekly honing, micro-ribbed side for monthly honing.

How to hone:
Correct angle and minimal pressure are important. Use the angle guide on the collar for correct placement. Apply just enough pressure to touch the knife to the steel. CAUTION! Damage can occur by applying too much pressure or incorrect angle.
1. Starting at the heel, draw the knife down the steel and back. Start on one side, and draw the knife down 5 times.
2. Now on the opposite side, draw the knife down 4 times.
3. On the other side, draw the knife down 4 times.
4. Opposite of that side, draw the knife down 3 more times.
5. Now, draw the knife down 3 times.
6. And 2 times opposite of that side.
7. And once more opposite of that side.
