Can this machine function solely as an extruder when used with pre-made dough?
Yes, this Estella pasta machine can be used solely for extrusion. Prepare the dough in a planetary mixer and transfer it to the pasta machine. The dough should be loose and granular, not a compact mass. Once the dough is ready, mix it briefly, perform an initial extrusion using the plastic die to clear any residue from the extrusion duct, and then proceed with extrusion using the bronze dies.

Choose from two models with either a 4.6-pound capacity that can handle 9 pounds of dough per hour or a 9-pound dough capacity that can handle 18.5 pounds of dough per hour. Both machines have a dual feature that mixes and extrudes pasta dough into various shapes. Several pasta dies are sold separately and are available for purchase.
Their durable stainless steel body includes a 6 or 10 quart aluminum bowl, which can be removed for easy cleaning. The interlocking lid keeps operations safe and prevents the machine from running when open. Compact and easy to use, Estella pasta machines are perfect for creating a variety of pasta.
