Double Deck Design
This unit offers 2 full size oven chambers that each comes with 3 adjustable wire racks, and with 11 sets of slides along the interior side walls you can easily adjust the position to accommodate different product sizes and get optimal airflow. Because the oven chambers are stacked vertically, you get two convenient, space-efficient ovens in the footprint of one!
Independent Chambers
The 11 kW heater in each oven lets it operate at temperatures ranging from 150 to 500 degrees Fahrenheit, and separate thermostats let you set each chamber independently. Each oven chamber also comes with a 2-speed fan that lets you switch between high and low speeds to accommodate many different types of foods, and they also feature "cook" and "cool" modes too.
Glass Doors
Each chamber has 2 independent glass doors, which let you check on dishes without releasing hot air and reducing the chamber temperature.
Interior Lights
Just flip on the light controlled on the exterior control panel of each oven to illuminate your food inside to see what's cooking!
Deep Depth

CPG Convection Oven Operation and Maintenance
Properly operating and caring for your CPG convection oven is essential for long term use and maintaining optimal performance. Follow along to learn relevant information and helpful tips about your CPG oven.
My name is Alan Peterson and I am the equipment brand manager for CPG, and today we will be going over the CPG convection oven. After your convection oven has been installed by a licensed technician, you should be ready to get it started.
The on switch is right up here at the top left of the control panel, that means on. Then you will start to hear the fans start going, that is the convection fan in the back. You will see that there is an on / off switch and a cook / cool switch to the right of that. The cook / cool switch, for instance, if it's set to cook, as you open up the door there is a switch that will go off and that will stop the fan from going. The purpose of that is when you are cooking food, perhaps the same recipe over and over again, and you want the cabinet to maintain the temperature inside you are going to leave the cook switch on to cook. That way when you are opening up the door the fan is gonna stop and that way you are going to keep that warm air inside. Then if it's perhaps at the end of the day and you are switching to a different recipe, you can switch to cool. Then when you do cool and open up that door, the fan will keep blowing and therefore it will cool the cabinet and get rid of the warm air that is inside.
There is also a timer here on the side. That is simply a bell timer that is going to go off. It does not control the oven, if you're setting your timer to 5 minutes, 10 minutes, whatever it may be, and it goes off you are going to hear the ding and the oven is still going to keep burning and operating and everything. You will just need to make sure that you are pulling your food out and not letting anything burn.
After that, you got the temperature here. CPG convection ovens operate at 150 to 500 degrees Fahrenheit, burning at about 54,000 BTU. Below that you have the fan speed, high / low, that is going to be for whatever your recipe is calling for. Let's say if you want to cook things a little bit faster, move things a little bit further along, then you can have the fan speed on high. If you're doing something like a roast, you're trying to go more for that low and steady recipe, then you would want to put the fan speed to low. Therefore, you got two operations going on with the fan speed.
With your CPG convection oven there is a light switch for seeing what your food product is looking like inside here, a simple on / off here. The other thing with the control panel is you will see that there is a heat on light, that light will turn on when you are getting that to preheat. Let's say you are going to 375, as the oven is preheating and getting up to 375 then you'll see that light be on and then once it hits 375 the light will turn off.
A couple other features with CPG convection ovens - the handles, you see this black material on the outside, this is called Bakelite. This is a Bakelite handle that helps reduce the heat and how hot these handles will get. As you're working with a hot convection oven things tend to heat up and everything so this is to help keep your employees' hands safe.
You will also notice too with the CPG convection ovens that there is this metal panel strip going right here and that covers from the left door to the right door. So with CPG convection ovens you're always going to do left door first and then right door, and then you will need to close the right door and then left door. That is there for maintaining and keeping warm air inside the cabinet, making sure that not a lot of air is coming out and again making the handles warm or anything like that. That is to help improve the efficiency of the cabinet.
Our CPG convection ovens have a porcelain interior, this makes for a little more extra durability and also makes it easier to clean at the end of the day. CPG convection ovens are also stackable, so you will notice on the top here there is these four knobs that are sticking up. The purpose of that is for when you are putting one convection oven on top of the other it is going to hold it in place. You will also notice the flue on the back here, there is an attachment that will then run that through the full height of the double stacked convection ovens.
With your CPG convection oven there is a flame sensor which is typical for any convection oven. That is simply going to, when you turn this on, if the oven fails to ignite three times in a row the gas will automatically shut off. There is a sensor that will shut that off. If that happens, we recommend simply giving it another probably 30 minutes until you try lighting the oven again. If this problem persists then we would recommend calling a technician to come out and work on the unit.
CPG offers a lot of different parts and accessories to go along with their convection ovens. For instance, if you want to expand your output with your convection oven there is the second option of getting a second convection oven to go on top and it be stackable. The other thing is too you can get more shelves, each convection oven comes with 3 shelves. But if you'd like to increase how much you're doing there, you can get an extra one. The other thing is too is for parts there are replacement doors, replacement door stop assemblies, replacement thermostats, ignitors, ignition, and then anything in between there. That way you can keep your convection oven running and not run into any issues.
With your CPG convection ovens cleaning is really simple. This is a stainless steel exterior and porcelain interior so we recommend simply using hot water and soap with a soft cloth. We don't recommend using any brushes, steel brushes, or anything like that. And also to avoid using any acid based chemical cleaners or anything abrasive. But otherwise, your typical dish detergent and hot water and a cloth is all you will need to get it clean.
