Prechilling or preheating the carrier can also help extend this time. To prechill, tilt the unit with the opening facing up, add ice water, and close for 15 to 20 minutes. To preheat, do the same thing but with hot water. Each pan carrier is sized to fit up to 5 full-size, 2 1/2" deep food pans. Other pan configurations with full, 1/2, and 1/3 size pans are also possible. To make the unit easy to access, its doors open a full 270 degrees. Once closed, its latches keep the doors shut during transport. The exterior is made from extra-strong polyethylene, allowing for frequent, on-the-go use. Its also textured to minimize scratches and other signs of wear. Plus, front and back molded-in handles provide a comfortable place to grasp.
