Perfect for 5-6 cup flour recipes. Raise dough to top of rim or a bit higher and you get the perfect sammich bread. It seems the best pan I have for using high protein King Arthur Sir Lancelot flour recipes. Produces a great chewy bark where it crusts up against the sides and bottom. found 375 F for 45 minutes is perfect tome/temp regardless of recipe used. Found the trick is grease it with a bit of coconut or olive oil, don't wash it, leave it be, stuff it in a paper bag between use, loafs drop out instantly. Nice bread pan all around.

I may have gone a little overboard with the 2 lb pan for an amateur baker at home but this thing made it easy to make my first white bread loaf. It has a coating on the inside that made it super easy to slide the loaf out to cool and it was even easier to clean the thing.
