It has a fermentation range of 18-22 degrees Celsius. Direct pitching is possible with this yeast, though rehydration is recommended for high-gravity fermentation or when yeast health is critical. To use, rehydrate your desired amount of yeast in 10 times its weight of clean boiled water heated to 25-30 degrees Celsius in a sterile container. Ensure all the yeast is in contact with the water, then allow to rehydrate for 15-30 minutes, ensuring rehydration does not exceed 30 minutes. Pitch the rehydrated yeast into a fermentation vessel with your wort. The temperature difference between the wort and the rehydrated yeast should never exceed 10 degrees Celsius.
