It's particularly well suited for use in beers made with late dry hop additions, where the fruity esters will amplify the juicy, tropical qualities of classic NEIPA hops! The yeast's low attenuation rate leaves higher residual sugar for a soft and light palate, while its medium to high flocculation rate adds a hazy appearance to finished beers when used in higher doses. This commercially produced yeast yields consistent, dependable results, allowing you to brew your signature recipes time and time again with confidence. This yeast is POF phenotype negative and diastaticus negative. It has an apparent attenuation of 71-75% and an alcohol tolerance of 11% ABV.
This yeast is recommended to be used at a dosage of 0.5-1 grams per liter (50-100 grams per hectoliter); for higher gravity wort or if you desire a hazier appearance, increase the dosage rate to 1.5-2 grams per liter. It has a fermentation range of 18-25 degrees Celsius. Direct pitching is possible with this yeast, though rehydration is recommended for high-gravity fermentation or when yeast health is critical. To use, rehydrate your desired amount of yeast in 10 times its weight of clean boiled water heated to 25-30 degrees Celsius in a sterile container. Ensure all the yeast is in contact with the water, then allow to rehydrate for 15-30 minutes, ensuring rehydration does not exceed 30 minutes. Pitch the rehydrated yeast into a fermentation vessel with your wort. The temperature difference between the wort and the rehydrated yeast should never exceed 10 degrees Celsius. Any unused yeast should be resealed in its original packaging and stored in a cool, dry place.
