Maintain your food's temperature and quality between preparation and service by adding this Vulcan VP18-IM3PN full size non-insulated heated holding / proofing cabinet to your establishment. This heavy-duty, 20-gauge stainless steel cabinet is cooler to the touch than competitive units which makes for easier and safer transport. It also features an energy efficient heating system that reduces energy usage by 33%. Plus, it reaches your holding temperature 16% faster than other brands of holding and proofing cabinets.
This mobile cabinet is ideal for hospitals or nursing homes since it can be loaded in your kitchen and then transported to the dining room or serving area. For security during transportation, this model has field reversible heavy-duty hinges, a latch mechanism, and gaskets. The top mounted, recessed control panel is out of the way during transport while 5" casters, two swivel casters with brakes and two rigid casters, make it easy to roll the unit around your restaurant or banquet venue.
This holding / proofing cabinet can accommodate up to (18) 18" x 26" pans or (36) 12" x 20" pans thanks to its removable, adjustable interior pan supports on 3" centers. The adjustable electronic thermostat/thermometer is equipped with a fan on/off switch making it easy to change this cabinet from holding to proofing. A drip trough and drain pan helps contain messes both while the unit is stationary and during transport. Plus, to maintain even internal temperatures, this heated holding and proofing cabinet features 2000W of heating power and a blower motor. A 120V electrical connection is required for operation.
