I've ordered these before and received the wafer size as pictured. I ordered recently, and they were small chip sized. Would like to be informed if product changes. However, they do melt well.

This chocolate bloomed after it was gently melted. Did not work as well as other couvertures we have used.

I used to use Cocoa Barry’s Brune compound chocolate in my pastry shop. But, due to rising costs and availability issues I decided to try this van leer chocolate. It looked promising from the description until I was eventually able to try it in person. I soon found out the chocolate wafers do not melt evenly and some of the wafers even remain solid. The chocolate did set quickly, however, it was too thick to leave behind a nice,even layer. Overall, it is decent product for the price and for anyone who is looking to dip fruits into it. But, it my case I found this chocolate to be disappointing and it was unable to properly assist in the applications for my pastries.
