This rolled donut croissant proofs into flaky, golden layers with a tender, buttery texture that will have your patrons savoring every bite. Prepare an assortment of chocolate, almond, and butter croissants in your cafe or bakery, or build sandwiches piled high with cool salads and crisp, fresh toppings to serve to lunch guests. Even cube and bake with creamy custard for a succulent bread pudding to end the day. From breakfast to dessert and everything in between, this donut croissant adds flaky, buttery goodness to any recipe!

Whether you're short on counter space or time, this dough eliminates the intensive task of folding your own dough sheets by hand without compromising on made-from-scratch taste. To prepare, remove the desired number of donut croissants from the freezer and place on parchment-lined pans. Cover with plastic wrap and defrost completely at room temperature, overnight in the cooler, or retarder. When pliable, bend edges of each donut croissant until the tips touch. Place them 3 by 5 on a donut frying screen, then temper at room temperature for 20 minutes and proof at 90 degrees Fahrenheit until doubled in size. Dry them for 15 minutes at room temperature prior to frying. Fry at 375 degrees until golden brown on the underside, about 2 minutes, then turn them and fry until golden brown, about 2 additional minutes. Donut croissants can be cut and filled with sweet or savory fillings after baking and cooling. Finish with a sprinkle of confectioner's sugar, glaze, or icing on these sweet pastries for a classic touch!
