This cheese, once grated, is THE best for pasta, and just as good sliced as a side for antipasto. We also put it on pizza and salad. Our extended family has been eating this as one of their primary cheeses for over 30 years. It puts Parmigiano and Ramano to shame. Regular Asiago is OK, and is still great for the above, but there is a sharper, more flavorful taste to the aged, that when matched with it's unique texture, cannot be beat in my opinion.
