This salt is best used as a finishing salt to enhance the look of your dishes and give them a mouthwatering, crunchy texture. Try sprinkling atop eggs, hummus, fish, or vegetables - just a small pinch of this salt is needed to deliver big flavor! Due to a lack of drying-agents used during its cultivation, it has a higher moisture content than most other salts, resulting in a slower dissolve time and lingering flavor. Because of this, Fleur de Sel cannot be used in a grinder or salt mill and is not typically used in cooking, where its prized flavor can be lost.

Delicately and Traditionally Harvested

The harvesting of this Fleur de Sel is a delicate process that takes place only between the months of June and September in small, daily batches to ensure quality control and optimal weather conditions. Hand-harvested by traditional artisan crystallizers in the Salinas of the Ebro River Delta Natural Park off the Mediterranean coast of Spain, the salt is manually raked from shallow pools of seawater, and then left to dry in the sun and in the wind in order to obtain a pure product. The conditions must be just right for the salt to "bloom" like a flower on the surface of the water, resulting in its name and relative scarcity. With no industrial processing or additives involved in its development, Fleur de Sel is the most natural and pure specialty salt in the world. It also has the highest nutrient content, containing 80% of the trace elements necessary for our bodies.
