I purchased this mix with the intention of making a Snickerdoodle. Took me a couple of test batches to get it down but I have had customers telling me they are the best they've ever had. I do my batches using 3# of mix - 2 tsp of Cream of Tartar, 1 TBSP Cinnamon, and 9.1 oz of water. My cookies are 5"+ in diameter so to get them to cook evenly I press them down. The dough was sticky so I learned to press them into the cinnamon sugar so they don't stick. I don't have a full kitchen at the shop - I have gotten it approved from the Health Department to use a table top convection oven and I do small "artisan" batches.
