This knife works VERY good. I should have purchased more exactly like this so I have some that are sharp on hand.

This boning knife very sharp and cuts effortlessly and is an essential item in every chefs tool kit. I highly recommend this product, I would certainly purchase again.

This knife is amazing for prepping meats. It is somewhat flexible and very sharp. The blade is the perfect length to easily butterfly and trim a variety of meats. Chicken breasts, steaks, chops, all prepped with ease.

Extremely sharp easy to handle. Best knives I've ever bought. I would highly recommend these to anyone who just starting out in a business, as they are one the cheaper side but amazing quality

I have tried several other knives for D boning chicken and turkey and none have preformed like this one. We make our own dog food and often need to cut the meat off of the bone or just section a whole chicken or turkey, this knife does it seamlessly . highly recommend giving it a try you won’t be sorry. We always wash it by hand rather than putting it in the dishwasher. It is sharp and I would recommend getting a cover especially if storing in a drawer. It is sharp.

We have a number of filet/boning knives and this was not a great purchase. The blade seems to lose its edge very quickly and is not quality enough to obtain a good edge when sharpened. Will not buy Mercer again.

We use the color coded handles to organize our kitchen and keep certain colors in specific sections. Great quality for the price for the average kitchen use.

This is a great and affordable boning knife. It is perfect for fabricating chickens, boning out pigs, and the handle is pretty comfortable as well.

The overall weight and balance feels good, handle feel is secure and size is about right, blade is very sharp, holds an edge reasonably well, does not rust (I only hand wash) etcetera as you would expect for a decent knife.

It is great for slicing through vegetables, but the blade is slightly thin. Razor sharp, holds an edge, and much stiffer. It is heavier and sturdier, so can handle the vegetables as well as tougher foods.

I can't think of anything else one could ask for on a culinary knife. What can I say it's a great product. Overall this would be a great addition to anyone's culinary knife set. Thanks for all.

My new favorite boning knife, Solid comfy handle too, it's nit just for boning, works well in our bar and prep area too, perfect size. ended up buying a few more, you won't find a better knife in the price range.

This knife, perfect for working in the kitchen very good for cuts of meat and bone is a very strong knife, but the only thing that I do not like is that it loses the edge very fast, otherwise well

I love this knife! It debones quickly and easily. It stays sharp for a long time and the handle is comfortable to hold. This is great for color coding your restaurant.

The perfect boning knife to have in the kitchen because the blade is sharp and strong and the handle has a good grip. We use this knife to cut up our fryer chickens. The knife does the job quickly and efficiently.

These knives have an awesome handle and are easy to clean. We use them daily, and they have held up rather well for us. They tend to need to be sharpened a little more often then expected- but hold there edge once touched up. I would rate a 4.5 if that was an option.

Great knive for the $. Like the grip. I used another brand from Germany that is very known. While I really like my German ones, the prices are very expensive to replace.

Very good knife for cutting meats and fish. Very sturdy and durable, used it to bone short ribs and was a wonderful experience with this knife. the grip on this knife feels very nice and would not slip off your hands, blade was very sharp out of the package. If you are on a budget and need a good boning knife that will last overtime this should be your first choice.

This is a great knife for beef! A Cost effective alternative to a knife service for a tool i use less often then most. The grip is very comfortable and makes for quick work.

This mercer boning knife is a heck of a bargain. The knife comes razor sharp with a nice non slip rubber grip. I find myself using it for other tasks like cutting veggies as well as its intended use of cutting meat

Mercer always makes great knives. This 6 inch curved boning knife is perfect. we love the different color handles which prevents cross contamination and the knife stays in the proper work place.

This stiff boning knife is great quality. It's sturdy and holds up under heavy usage. The handle is comfortable and the red really makes it stand out.

I use these knives for my sharpening service they have a nice profile that does not get thick after a few sharpenings also good height at heel to keep you safe when chopping close to the heel, Highly recommended decent edge retention for a stamped boning knife.

I love this knife. I really like the handles on Mercer knives in general. They seem to fit my hand well and don't slip when I am cutting. The blade is sharp (wear cut gloves) and holds and edge well.

Just what the doctor ordered. lol This boning knife works great. I especially like the curved blade for getting around those bony angles we run into when deboning various products. Get one, you won't regret it!!

This is a Great boning knive, The profesional chef who used ones, was delighted with the soft cut. The handle is soft and non-slip grip. For me lovely colour which make a real diference between other brands. I'll buy the chef knive in the same brand in the same lime green color

I cannot believe the inexpensive price for this great knife. I have used this everyday for a month and it still is razor sharp. I will be buying more.

We use this to do a lot of filleting and when we are really trying to get that super sharp cut, it works great for the tight spots on meat, especially chicken.

saved a few bucks rather than buying from sysco and it's held up just fine. Arrived in a matter of a few days. Will reorder more knives from here.
