An excellent all-around, all-purpose knife combining the features of a chef's knife and that of a slicer into one. The modestly-curved blade allows some rocking of the knife back and forth for mincing, chopping, and dicing. The perpendicular, scalloped grooves minimize friction, and, thus, improve separation without shredding, making it ideal for cutting thinner slices of vegetables and meats while retaining much of their juices. The combination of a razor-sharp blade and good weight distribution makes most knife work effortless. Its only detraction is some grooves are not uniformly spaced from the cutting edge of the blade. I don't see this phenomenon shown on product pictures, but on my knife, the grooves are closer to the edge (at least on the left face) as the blade begins to taper towards the tip. I don't enjoy cutting cabbage and carrots, this knife makes it reasonable though. Been using one for about 3 months now, keep the edge pretty well. There is something about the way it is built, its well balance and comfortable grip on it.

I have wanted a Santoku knife for a long time . I love to cook and the average knives I had at home just weren't cutting it !!!! Literally . I found the Mercer 7" Santoku knife . .. The price was right , I took a chance and I could not be happier . Slicing , chopping and prep work is a breeze . The blade is excellent quality as well as the handle that feels great in my hand as well as being the perfect weight .

My first impression of this knife is that it sits very nicely in the hand and has a great weight to it. It has an extremely sharp edge which after a few weeks of use has held its edge well.

One of my most used knives. This is a real workhorse. Holds edge well. Only hand wash, this is not something you want to run through your dishwasher.

Our chef has used many knives and this is the one he repeatedly asks us to order time and time again. You can spend more but the Mercer line makes a great knife. We highly recommend them and they are the only brands we use in our kitchen.

No complaints whatsoever. Easy to keep sharp, very comfortable to grip and use, and outstandingly sharp right out of the package. I've especially been enjoying the ability to rock the knife slightly, and it really speeds up chopping herbs/garlic. After using it every day for over a year, I'm wondering if they left off a digit from the price, as this knife easily outdoes knives many time the cost. It's truly a great deal, and would be a great deal at twice the price!

I have been researching and testing knives of all quality and prices and the mercer genesis line is one of the best I've seen. The quality cannot be beat for the price. I have been using this knife for a few months now and not only is it comfortable, but it has stayed sharp. I got the sharpening steel and plan on using it eventually but the knife has not needed it yet.

This is a fantastic knife for the price. Keeps its edge pretty well and easily sharpened. Love the neoprene-like handle. The blade has a bit of weight to it and balances well in my hands. Technically, it has scalloped sides, rather than a real Granton edge, where the scallops run all the way down to the edge. So, it's really a straight edge knife. Whether prepping veges or smaller chunks of meat, sometime I prefer shorter blade than the traditional chef's knife and Santoku knives really makes the chore easier for me.

I have had this knife for a couple of months now, and it is by far my favorite all purpose knife in my kitchen. It arrived very fast and was as sharp as a razor blade, which is a good thing for a knife. It has had no trouble handling even the toughest cutting tasks, and I have not had any problem with maintaining its edge. I hone it on a steel each time before I use it.
