I've owned my Mercer chef knife for almost 10 years now and use it almost daily in my home kitchen. The quality and weight of the knife has always felt more comfortable for me than a lot of the other knives I've owned and now I purchased a few more Mercer knives including a longer boning and a bread knife too. It's still able to hold an edge after a long time and there is plenty left to last another two or three decades of home use.

First, I'd like to correct an error in the description- as you can see in the pictures, the handle is a comfortable, soft, slip-resistant molded santoprene which completely encases the rat-tail tang of the knife. It does not have a full tang, nor does it have riveted handle scales (which are what's found on knives with full tangs). At one point, a full tang with a triple riveted handle was considered the best. With modern technology, that is no longer the case, and many actually prefer molded santoprene for comfort, slip resistance and durability. I believe what is meant in the ad copy is that the bolster is fully webbed (the bolster's web, sometimes called a quillon or finger guard, runs down the full length of the choil). Decent worker bee knife that is good for every day tasks. Did dull quickly so be ready to hit it with a sharpener pretty soon after purchase.

I cannot function in the kitchen without my Mercer knives. The 8" Chef Knife is the one I use more than any other. The length is great for just about any type of slicing and I have found that while it does require occasional sharpening, it holds it's edge nicely.

What a knife cuts stuff like butter. Cut bricks of cheese by hand or a Rubén at easy. We replaced all our knifes and for the price you can't beat it.

OMGosh. What a knife. This one is super sharp. I don’t have a slicer and do all my vegetables by hand. Mostly the knife will dull in a few days. I can never slice tomatoes properly once the knife has been used on other things. This knife stayed sharp for me.

These knives work well. Sturdy blade, although they dull within a couple months. Since you aren't supposed to use an electric sharpener on it, I will need to take it to a professional to get them sharpened.

This is one of the sharpest knives right out of the box. It is my first Mercer, but I do plan on purchasing more from the Genesis line. It is incredibly strong with the forged blade and extremely versatile.

Mercer is a brand that I can trust when it comes to knives. First of all, the metal blade is from Japan so I think it's high quality. Secondly, the price is affordable for its quality. As long as we take care of the knives properly, it can last for years. Have hundreds of knives, and Mercer knives are one of the most durable for its price. This knife comes sharp. It is well balanced and the handle keeps it from slipping in the hand during use. The blade is a little longer than the normal knife that I use so it definitely takes some getting used to. Overall, a great knife for everyday use.
