I have two Victornox Chef's knives, an eight inch and a ten inch, and they're amazing. Incredibly sharp, takes an edge easily, and highly durable. I started with the ten inch, which I've had for almost two years now, and it works great. However it was a bit cumbersome for some things (like breaking down bell peppers) so I bought the eight inch and fell in love with it. The eight is my go to now but I still carry both. I use the big guy for squashes and larger, harder, fruits and veg as well as slicing/trimming/chopping roast, loin, or skirt. The eight inch, as I said, is my go to for everything else. I use it all day, every day, on fruit, veg, meat, and everything inbetween.
