The disk and tray are constructed of durable aluminum to ensure long-lasting use in your establishment. The disk fits over the tray, and the perforations on the disk help remove fat from your dishes, so it will collect on the tray below. The disk keeps the food high and dry, creating a crispier product.
Both pieces of this set feature a Pre-Seasoned Tuff-Kote® finish that provides permanent stick resistance. The Tuff-Kote® finish eliminates the need for pre-seasoning, and the dark pan finish bakes hotter and faster than bare aluminum. Plus, the coating will not peel, chip, or flake off over time, and it's safe to use metal utensils on it. This set is also heat safe up to 700 degrees Fahrenheit.
