Kabocha is the only winter squash I have found that I like. My digestive tract finds it soothing. Kabocha is difficult to find off season so I am pleased to find it. I had purchased a bushel from Webstaurant prior to this purchase. This bushel was grown in Ohio while the previous one came from Mexico. The Kabocha from Mexico was clearly “seasoned” longer than the Ohio product. This gave the Kabocha from Mexico a better flavor and texture than the product from Ohio. The Ohio product will get there but I am hungry. Both shipments were delivered in good condition and the product was safeguarded. I am growing Kabocha but have a couple of weeks before I can begin to harvest. I will probably look to Webstaurant when my homegrown Kabocha runs out.
