How do I know if I should buy a strip heater with an infinite control?

An infinite control essentially operates as a timing device and usually replaces the standard on/off toggle switch. Instead of controlling heat, the infinite control turns the heater on and off at your desired frequency. This process only indirectly affects the temperature, but is beneficial for applications in which the operator wants to manually decrease the wattage from its maximum 12.2 amps. Such applications would not entail recipes sensitive to the unit cycling its power. Please note that because toggle switches accommodate more than 12.2 amps, a toggle switch may not be able to be converted into an infinite control in the field.

I bought this warmer after I started having issues with the ServIt SWI-48CP 48" High Wattage Strip Warmer with Adjustable Infinite Controls. After researching, I settled on spending more money for an Infrared food warmer. A supposed upgrade. Everything about infrared warmers that I researched, this product does not do. I think the cheaper strip heater version did a better job for less money. 1) It heats the area around it a LOT, way more so than the cheaper strip heater. This is what an infrared warmer was supposed to help with. 2) It dries out food. If the food isn't picked up right away, it starts drying out buns and other types of food. 3) I'm not sure what is different about this infrared warmer and the cheaper strip warmer. It still has a rod down the middle that heats up and warms the food.

Not to be alarmed, when you first turn it on there will be smoke but that's just because its new, it does wear in farely quickly and heats up very quickly!
