Easily monitor the unit through the day, thanks to the easy-to-read, solid state electronic controls and large, LED digital display.

This particular unit features AquaTemp technology, which relies on both temperature and humidity to best hold a variety of dishes. The levels of both environmental factors are displayed for your convenience, though the priority is placed on the temperature to ensure safe holding conditions at all times. An LED light illuminates when the water level is low, and the water heater will automatically shut off when the level becomes too low for safe operation. This temperature-humidity system maintains food texture while in holding, helping to ensure that you serve guests only the highest-quality meals!

The body is made of sleek, strong stainless steel and is fully insulated. Combined with an internal stainless steel frame that serves to fortify and protect the body of the cabinet, this unit is especially durable and reliable in busy kitchens and with everyday use. Plus, for your convenience, the cabinet door, which is field reversible, comes outfitted with a silicone gasket for a tight seal and a magnetic latch that's easy to open. As a result, the door is sure to close securely, retaining heat for optimal efficiency, while being quick to pull open whenever access is required.

The interior is designed to accommodate the included rack, which holds up to 16 full size sheet pans or 32 full size food pans. This capacity makes the unit ideal for flexible usage, serving as hot holding storage and transport when preparing a variety of dishes. To enable mobility, the rack is mounted to a set of 5" casters. Because they swivel, the casters make navigating through cramped back-of-house areas and narrow hallways not only feasible, but quick and easy. Two of the four casters even feature brakes, allowing you to lock the rack in place while loading or unloading. The cabinet itself is set on 4 heavy-duty legs that adjust to level the unit on uneven surfaces. A 208V electrical connection is required for operation.
