Cres Cor 121PH1818D Details
This versatile Cres Cor 121-PH-1818D Deluxe proofing and holding cabinet is perfect for use as an all purpose proofing cabinet, or a moving air proofer for delicate products, as well as a holding cabinet to keep products at proper serving temperatures. Simple controls allow you to switch between holding and proofing modes at the flip of a switch.
The holding function has a maximum temperature of 180 degrees Fahrenheit. The unit's proofing function has a temperature range of 80 to 95 degrees Fahrenheit, and provides 95% relative humidity to keep your products from drying out. The Cres Cor 121-PH-1818D Deluxe non-insulated holding and proofing cabinet features wire pan slides to securely hold up to 18 full size sheet pans, or 36 full size food pans, with 3" of clearance.
A clear Lexan door provides excellent product recognition while a perimeter door gasket minimizes heat loss. Heavy duty 5" swivel casters, 2 with brakes, provide excellent mobility even when the Cres-Cor 121-PH-1818D Deluxe holding and proofing cabinet is fully loaded. It requires a 120V electrical connection.
