Create the highest quality gelato or sorbet with this Cattabriga Cubo 2i 2.75 qt. air cooled countertop batch freezer. This unit can make a batch of product but also features a continuous churning design to freeze mixes of gelato or sorbet, combining cooling and stirring to reach the semi-solid consistency of traditional gelato. Additionally, this batch freezer maintains the product structure for an indefinite time within the batch freezer cylinder. It's the perfect addition to ice cream shops, restaurants, bars, and coffee shops.

The cylinder can be refilled with fresh liquid mix as your product is sold and holds a batch capacity of 2.75 qt., producing 13.7 qt. per hour. It features an air cooled system and has 11 personalized recipes with 15 variable speeds. This machine's inverter adjusts the motor speed for a variable beating speed to better control the gelato consistency. Variable beating speeds allow the unit to produce special recipes like granita and frozen coffee cream.

This batch freezer features storage and night modes as well as an app to allow the user to remote control the machine. During storage mode, the user can add the liquid mix and restart the freezing process, and the machine will reactivate the program, bringing the gelato to its original consistency at a 60% shorter freezing time. Afterward, the machine will automatically go into storage mode. Night mode can be set using a timer, which automatically turns off any batch freezing or the storage cycle to keep the temperature in the cylinder similar to a refrigerator. This ensures the gelato mix is kept at a positive temperature overnight. This unit requires a 220V, 1 phase electrical connection for operation.
