I've tried this at our commercial bakery for the last year. I am convinced that it is not Cassava Flour, but Tapioca. It has a styrofoam-y feel to the fingertips, everything sinks in it even if you add extra flour. The only thing going for it was the price and it does not have a flavor. We really tried hard with it and when we did some more research this is exactly what Tapioca does. Webstaurant, should this be investigated? Have we been misled here?

This is tapioca flour not cassava. Cassava is the whole root dried and ground up. It has a less fine texture. This is the starch from the root. Extra white and fine. Definitely does not bake like cassava flour. It seems like a great tapioca flour, though. Just deceptive labeling.
