Its convenient pass-thru design saves time, prevents cross-contamination, and provides better customer visibility. It fits up to (5) 18" x 26" full-size sheet pans using a Multi-Rack (sold separately) or (7) 12" x 20" hotel pans, and it has a 7" TFT color touchscreen for simple and intuitive operation. It holds a total of 1,500 recipes with up to 15 different steps per recipe. Recipes can be grouped and uploaded with matching photos. This unit's quick-select recipe feature allows you to save up to 81 of your favorite recipes on the homepage with 9 thumbnails per page.

This unit features 5 cooking modes including injection steam, Delta-T cooking, cook and hold, recipe, and steam on-demand. Its MenuPlanner feature has a simple drag-and-drop interface, allowing you to cook different items unsupervised at the same time. With up to 10 integrated timers and automatic notifications, this feature ensures efficient, precise, and on-time cooking consistency. This oven also offers a SmartChef feature, which allows you to input a type of food and the cooking method and temperature to automatically guide you to a great result.

This combi oven features ClimateControl to control the air, heat, and humidity levels, helping to optimize its processes, shorten cooking times, and achieve consistent results. It combines injection steam, smart sensors, and an integrated drain and inlet system for a safe, efficient full steaming capacity. This model is easy to clean with a CareCycle automated, recirculating tablet-based cleaning system. This system offers 7 different cleaning cycles and a scheduler for overnight cleaning. Both the steam production and cleaning system use minimal energy and water to reduce costs.

This combi oven has a steel cavity with seamless welding and rounded corners for optimal airflow and easy cleaning. It has 2 doors with swiveling glass panes and 2-step safety handles. This unit includes interior LED lighting, and it is IPX5 rated for protection against water spray. It has overheat protection, automatic restart, and automatic rinse after an interrupted cleaning process. It has an integrated USB interface to transfer recipes, while its Ethernet interface and Wi-Fi connectivity allow for remote monitoring with the Open Kitchen application (1 year included with purchase). This unit requires a 208V, 3-phase electrical connection for operation.
