Quickly and efficiently cool your food through the temperature danger zone to protect meats, fish, produce, and other foods from bacteria that cause food-borne illnesses. This unit is capable of both blast chilling and shock freezing cooked or uncooked food in accordance with HACCP guidelines.

Rapid Cooling
If you want to rapidly chill hot food to 37 degrees Fahrenheit in 90 minutes, this unit can handle a total of 88 lb. In freezing applications, you can load this unit with up to 77 lb. of food to freeze down to 0 degrees Fahrenheit in 4 hours. In addition to quickly cooling food product through the danger zone, your blast chiller can be used to harden house-made ice cream or gelato quickly for smaller ice crystals and improved mouthfeel.

Temperature Maintenance

This blast chiller features a 2 hp refrigeration system that uses R-290 refrigerant to cool your food quickly to safe temperatures. The specialized refrigerant has an ozone depletion potential (ODP) of 0 and a global warming potential (GWP) of 3, making it the most compliant choice for your business. Since this unit utilizes auto evaporation and has a condenser filter, this model offers reduced maintenance needs. It requires a 120V electrical connection for operation.

Why can't I open my blast chiller after running the cycle?
When hot product is rapidly chilled, the pressure inside the chamber can drop slightly. This creates a temporary vacuum seal, making the door feel stuck. Once the pressure normalizes or the seal is broken, the door can be opened.

Stay away from this product! Almost 10k dropped on an appliance that failed after regular use within the first year. Warranty covered it- they couldn't figure out how to fix it so they gave a full replacement. The replacement failed within a year of replacing it but warranty only covers a year within purchase date, not replacement.
I have dropped hundreds of dollars to have so much of this thing replaced only for it to still not work.
I'd love to give stars for good customer service and it's decent freezing capacity but I can't in good consciousness give any more on an expensive appliance that won't work anymore after being used for its intention.

This thing works okay so far, but there is one thing about that is incredibly frustrating--its impossible to open the door! When unloading, the door shuts by itself unless manually restrained (not always doable during busy service) and once it closes it is a full 5 minutes before it can be opened again. May not sound like a big problem, but waiting 5 minutes to re-open the door to continue unloading product is not helpful. This is a preventable issue that some manufactures design to avoid, but not this manufacturer.
