Add a new twist to your classic foods with the Alto-Shaam 1000-SK SX 208/240V cook and hold smoker oven with simple controls! This smoker uses real wood chips to produce flavorful smoke for an authentic taste and appearance. The built-in smoker timer allows you to easily and precisely infuse mild, medium, or heavy smoke flavors into different recipes and products, including cold fish and cheese. For added convenience, this unit automatically shifts to hold mode once the cook time has been reached. It can also accommodate overnight smoking, cooking, and holding, helping you to save time and reduce operating costs. Plus, to help get you started, the unit comes with a complimentary sample bags of wood chips.

This unit has a temperature range of 200 to 325 degrees Fahrenheit or 94 to 163 degrees Celsius, and a hold temperature range of 85 to 205 degrees Fahrenheit or 29 to 96 degrees Celsius. Thanks to this unit's patented Halo Heat, products will be cooked, roasted, smoked, or re-heated at a uniform temperature for reliably delicious results! This innovative technology also minimizes shrinkage while tenderizing your meats and promotes a longer holding, which can help boost the efficiency of your operation and reduce overall food costs. This oven is controlled by simple touch controls and has a knob for adjusting the temperature. It also features a smoker timer and a cooking timer.

To withstand busy, high-volume kitchens, this unit has a total capacity of 120 lb., and features a set of three wire shelves that can accommodate up to 7 full-size (12" x 20") pans or 14 half-size (12" x 10") pans. A set of 2 stainless steel racks are also included, adjusting between 15 interior pan positions to allow for a wide variety of configurations. For easy cleaning, a removable drip tray is mounted to the unit's front exterior, while a set of four 2 1/2" casters allow for mobility while cleaning. 2 casters are rigid, while the other 2 swivel and feature brakes for stationary use. This unit requires a 208/240V electrical connection.
